FISH STEW WITH VEGETABLES | |
1 1/2 lbs. fish fillets, fresh or frozen 1 c. carrots, thinly sliced 1 c. fresh mushrooms, sliced 1/2 c. red bell pepper, chopped 1/2 c. green onions, chopped 1 clove garlic, chopped 3/4 tsp. Italian seasoning 1 bay leaf 2 tbsp. olive oil 2 tbsp. all-purpose flour 1/2 c. white dry wine 1/2 tsp. salt 1/4 tsp. pepper 1 c. clam juice or fish broth Thaw fish if frozen. Cut fillets into 1/2 inch cubes; set aside. Heat oven to medium heat. Saute carrots, mushrooms, red bell pepper, onions, garlic, Italian seasoning and bay leaf in olive oil for 5 minutes. Stir in flour, mixing well. Add clam juice, wine, seasonings and fish. Stir; bring to a boil and simmer 10 minutes or until fish flakes easily when tested with a fork. 4 servings. Remove bay leaf before serving. |
