RATATOUILLE (VEGETABLE STEW) 
1 eggplant, cubed
1 onion
2 to 4 tomatoes
1 to 2 green peppers
1 to 2 yellow squash
1 to 2 zucchini
Garlic to taste
Oregano to taste
Basil to taste
Salt
Pepper
Butter or oil

Heat oil in large pan. Put all vegetables in pan. Stir to coat with oil. Add seasonings to taste. Cover and simmer until vegetables are soft.

Good as side dish with broiled meat or as main dish with French or garlic bread.
