OVEN-BAKED "FRIED" CHICKEN 
3 1/2 lb. broiler-fryer (cut up)
1/4 c. corn meal
1/4 c. whole wheat flour
1/4 tsp. cayenne
Fresh ground black pepper
1 egg white, slightly beaten

Remove skin from chicken. Combine corn meal, flour and spices. Dip each piece on chicken in egg white, then in corn meal mixture. Place in shallow pan.

Bake, uncovered, at 350 degrees for about 55 minutes, turning once to brown chicken evenly. Makes 4 servings.
