POT ROAST 
1 trimmed roast (3 to 4 lbs.)
1 tsp. pepper
3 med. potatoes, diced
1 can onion soup
3 tbsp. cooking oil
e tsp. salt
1/3 c. self-rising flour
4 carrots, diced
1 can mushroom soup

Put cooking oil in electric frying pan. Turn temperature to 350 degrees or 375 degrees. Salt and pepper roast and roll in flour. Place in frying pan and brown on all sides. When brown, add onion and mushroom soup. Cover and cook for 1 1/2 hours. Then add potatoes and carrots; cover and cook for 30 minutes more. Add about 1/2 can of water if gravy gets too thick.
