APPLE BREAD PUDDING 
1 1/2 c. bread crumbs
1 c. milk
2 eggs, separated
1 tbsp. butter, soft
1 tsp. vanilla
1/2 c. raisins
1/2 c. sugar
1/4 tsp. cloves
1 tsp. lemon or orange rind, grated
1 1/2 c. apples, peeled and chopped

Cut bread and stir into milk over low heat for 2 minutes. Cool. Add beaten egg yolks, butter, vanilla, raisins, sugar, the spices, rind and the apples. Fold in stiffly beaten egg whites and bake in a greased baking dish at 350 - 375 degrees for 35 minutes.

SAUCE:

1/3 c. lemon juice
2/3 c. water
1/2 c. sugar

Mix in saucepan. Bring to a boil and add 3 tablespoons cornstarch which has been blended with a little water to thicken. Add yellow food coloring, if desired. Serve over bread pudding.
