POULET AVEC RAISINS BLANC | |
1/4 lb. uncooked ham, diced 2 whole chicken breast halved 1 tsp. salt 1/4 tsp. pepper 3 tbsp. butter 1 tbsp. oil 1 (1 lb.) can new potatoes, drained 2 tbsp. flour 2 c. cream 1 c. California White Table wine 1/4 lb. fresh mushrooms, sliced 1 c. seedless white grapes Simmer ham in a little water 15 minutes. Season chicken breasts with salt and pepper and saute in 1 tablespoon each butter and oil. Remove to a casserole. Brown potatoes well in fat remaining in pan and add to casserole. Melt remaining butter, blend in flour, cook 1 minute and add cream and wine. Stir until smooth and thickened. Add drained ham and mushrooms to casserole and correct seasoning. Pour cream-wine sauce over all and bake in 350 degree oven 1/2 hour. Add white grapes and bake 10 minutes more. |
