CHICKEN PARMIGIANA 
4 whole chicken breast (boneless)
2 eggs
1 tsp. salt
1/8 tsp. pepper
3/4 c. fine dry bread crumbs
1/2 c. olive or vegetable oil
2 c. tomato sauce
1/4 tsp. basil
1/8 tsp. garlic powder
1 tbsp. butter
1/2 c. Parmesan cheese
8 oz. Mozzarella cheese, cut in triangles

Place chicken on cutting board. Pound lightly with the side of heavy knife until 1/4 inch thick. Combine eggs, salt, pepper. Dip chicken into egg mixture, then into crumbs.

Heat oil in frying pan. Brown chicken on both sides, put in shallow baking dish. Pour excess oil from pan, then add tomato sauce, basil, garlic powder. Heat to boiling, simmer 10 minutes until thick, stir in butter. Pour over chicken. Sprinkle with Parmesan cheese. Cover and bake at 350 degrees for 30 minutes. Uncover. Place Mozzarella cheese over chicken. Bake 10 minutes until cheese melts.
