MAMA'S WHITE COOKIES 
1 c. raisins
Hot water
2 c. sugar
1 c. shortening or butter
3 eggs, well beaten
1 tsp. lemon extract
1 tsp. vanilla extract
1 tsp. orange extract
1 tsp. almond extract
4 c. sifted flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 tsp. nutmeg
1 1/2 c. buttermilk

Wash raisins in very hot water, drain and set aside to cool. Cream sugar and butter until fluffy. Add well beaten eggs, mixing well. Add cooked raisins and extracts. Mix thoroughly. Sift dry ingredients and add alternately with buttermilk to raisin mixture. Drop by spoonfuls on ungreased cookie sheet. Bake in medium oven (350 degrees) until delicately browned. Makes 8 dozen.
