MARLBOROUGH PIE (Carolina
Mountain Recipe)
 
2 c. applesauce
1/2 stick butter, melted
2 eggs, beaten
1 c. sugar or to taste
2 tbsp. flour or 1 tbsp. cornstarch
1 tsp. vanilla or lemon flavoring
Raisins, if desired

Mix together and pour into unbaked pie shell and bake in 350 degree oven for 40- 45 minutes.

Can be made with a meringue topping by using 3 eggs separated. Add 3 egg yolks to custard and heat.

3 egg whites, adding 6 tbsp. sugar for a stiff meringue. Spread on cooked pie and brown in hot oven 450 degrees until nicely toasted.
