MAMA RAE'S COOKIES | |
1 c. butter 1 c. sugar 1 c. brown sugar 1 c. Crisco oil 1 c. oatmeal 1 c. crushed corn flakes 1 egg 1 tsp. vanilla 1 tsp. salt 1 tsp. baking soda 3 1/2 c. flour 1 c. chopped pecans 1/2 c. coconut Preheat oven to 325 degrees. Cream butter and sugar until light and creamy. Add egg and oil. Stir until oil is mixed in well. Add oats, corn flakes, coconut, and nuts. Blend well. Add flour, soda, salt and vanilla. Mix well. Turn into balls the size of English walnuts. Place on ungreased cookie sheet and flatten with fork dipped in water. Bake just 12 minutes. Allow to cool a minute or two on cookie sheet before removing to rack. You can eat as is or sprinkle with powdered sugar for a fancier effect. Keep in tightly covered container. Can be frozen before or after baking. |
