CHINESE SUNDAES 
8 c. steamed rice
2 lg. cans chow mein noodles
Chopped stewing chickens (2 or 3)
Gravy made of broth & 8 cans cream of chicken soup
Season as needed with salt & pepper
1 lb. shredded cheese
4 stalks chopped celery
2 or 3 green peppers, chopped
1 lg. can crushed pineapple
Top with maraschino cherries
3 chopped tomatoes
Chopped green onions
1 pkg. shredded coconut
1 sm. pkg. slivered almonds

Broth and chicken bouillon may be used in place of soup, cream and parsley may be added.

You may need to use more of some of the vegetables listed here.

To Serve: Place all food on the serving table in the order listed and each person serves themselves. Serves 15.

A classic favorite at our house at New Year's Eve. We like the addition of a stemmed red maraschino cherry at the very top. (We also shred the chicken instead of chopping and omit the green peppers). The whole dish is not authentic to China or anywhere else except the U.S. so anyway you like it is the way to go. The flavors really are good together as this recipe has been passed around for quite some time. And oldie but a goodie for sure.
