MINIATURE CHEESE CAKES 
2 (8 oz.) pkgs. cream cheese
16 vanilla wafers
3/4 c. sugar
1 egg
1 tbsp. vanilla extract
Pie filling of your choice (cherry, blueberry, apple)

Combine softened cream cheese, egg, sugar and extract in mixer bowl. Beat until very smooth. In cupcake papers, put 1 vanilla wafer. Fill 3/4 full with cheese mixture. Bake at 350 degrees for 15-18 minutes or until lightly browned. Cool. Top with pie filling.
