PINEAPPLE CARROT CAKE 
2 c. flour
2 tsp. baking soda
1 1/4 tsp. salt
2 tsp. cinnamon
4 eggs
2 c. sugar
1 c. oil or melted butter
2 c. grated carrots (3 or 4)
1 sm. can crushed pineapple, WELL drained
1 c. chopped walnuts

Sift dry ingredients together and set aside. Mix eggs, sugar and oil, stirring well. Add carrots, pineapple and nuts. Add sifted ingredients, mix well. Pour into greased and floured 13 x 9 inch pan. Bake at 350 degrees for 40 minutes. Frost with cream cheese icing.

CREAM CHEESE ICING:

3 oz. softened cream cheese
2 tbsp. butter, softened
1/2 tsp. vanilla
1 3/4 c. powdered sugar
Half & half to blend

Combine.
