HAWAIIAN GRAHAM CRACKER CAKE 
1 cup (2 sticks) butter
2 cups sugar
5 eggs
1 pkg. graham cracker crumbs
2 tsp. baking powder
1 cup milk
1 tsp. vanilla
1 cup coconut flakes
1 (8 oz.) can crushed pineapple, well drained
1 cup chopped nuts

Preheat oven to 350°F.

Cream butter and sugar, add eggs and beat well. Add graham cracker crumbs and baking powder. Beat well and add milk, vanilla, coconut, pineapple and nuts. Beat until blended.

Pour into buttered pan and bake at 350°F 30 to 40 minutes. Cover with frosting when cool.

FROSTING:

1 (1 lb.) box confectioners' sugar
1/2 cup (1 stick) butter, melted
1 (8 oz.) can crushed pineapple

Add butter to sugar, mix then add pineapple and stir well. Spread on cake.

My grandma made this exact cake for me often in the 1960's. It was and still is my favorite cake. She used margarine back then instead of real butter (gag). Back then people actually thought it was healthier! I like to cut the sugar 25% and buy the lowest sugar graham crackers you can find or it's too sweet. I'd love to know the original source for this recipe, I suspect she got it from 1960's ladies magazine. She liked Better Homes and Gardens.

Years ago on a trip to Hawaii, I bought a small Hawaiian cookbook and a similar cake with graham crackers was included (no flour). I got rid of the small book but forgot to save the recipe and this looks to be the closest thing to it. I will try in a couple of weeks. Thank you!
