BROCCOLI SALAD 
Spinach leaves for plates
1 head fresh broccoli

Wash and slice flowerettes. Peel stalk and chop. Add to broccoli.

Water chestnuts
2 chopped boiled eggs (boil an extra egg for garnish)
Chopped cheese
Diced pimento (save some for garnish)
1 tbsp. onion, chopped very fine

Mix and arrange on spinach leaves on salad plate. Sprinkle top with pimento. Arrange flowerettes and sliced eggs around sides. Pretty red and green for holidays.
