MEXICAN BEEF MIX 
2 lbs. ground beef
1/2 c. chopped onion
1 tbsp. chili powder
3/4 tsp. salt
3/4 tsp. crushed red pepper
1/4 tsp. pepper
1/4 tsp. cumin, optional
1/8 tsp. oregano
2 cloves garlic, minced

Crumble ground beef into 3 quart casserole. Stir in onion. Microwave at HIGH 6-8 minutes, or until meat is no longer pink, stirring 2 or 3 times. Drain. Stir in remaining ingredients; cover. Reduce power to 50% (medium). Microwave 4-6 minutes or until flavors blend, stirring 2 or 3 times. Can be frozen (no longer than 2 months.) Can be used in tacos, burritos, Mexican salads, etc.

Since microwave ovens vary in power, you may need to adjust your cooking time.
