SPICED APPLE BUTTER 
8 lbs. apples
5 c. water
1 c. cider vinegar
8 c. sugar
4 tsp. cinnamon

Wash, peel, core and slice apples. Place apples in a large kettle, add water and cook until soft. Press through fine sieve or run through blender. Combine apple pulp with vinegar, sugar and cinnamon. Cook over low heat until sugar is dissolved, stirring frequently. Continue cooking and stirring until mixture remains in soft mass when a little is cooled, about 1 1/2 hours. Pour into hot, sterilized jars and seal. Makes 6 (1/2 pint) jars.
