PECAN BRITTLE 
2 cups pecans
1 cup sugar
1/2 cup light Karo syrup
1/2 stick butter
1 inch sq. paraffin
2 tsp. baking soda

Microwave sugar, syrup and butter for 3 minutes. Stir in Paraffin until it melts. Stir in pecans. Microwave 7-12 minutes. Remove from microwave stir in baking soda quickly. Pour on greased aluminum foil.

Note: best to use glass bowl in microwave.

I love this Brittle, but after making it several years, I changed: I use 2 more tablespoons butter instead of paraffin. I use only 1 teaspoon of baking soda. I cook it only until the nuts are as brown as I want them. I spread out and then lay 4 or 5 Hershey bars atop, then spread with spoon back as melt. Refrigerate to set up, break apart, store airtight (in fridge if hot weather). Very popular with friends and family!
