CHICKEN OR TURKEY SALAD 
2 c. white meat of chicken or turkey
1/2 c. finely chopped celery
2-3 tbsp. reserved chicken stock
1/3 c. mayonnaise
1/2 tsp. salt
1/4 c. slivered almonds
3-4 eggs, hard boiled, save some for garnish

Simmer chicken or turkey breast in water to cover with celery, chopped onion, salt, whole peppercorn and 1 whole allspice. Remove meat from bone and cut into cubes 1/2 inch or larger.

Add other ingredients and let flavors blend for 2+ hours in refrigerator. Any greens are fine, but endive is best.
