SWEET POTATO SOUFFLE | |
2 c. mashed sweet potatoes 1 1/4 c. white sugar (less, if you prefer) 2 eggs 3/4 stick butter 1 c. milk (if you use canned potatoes, 1/2 c.) 1/2 tsp. nutmeg 1/2 tsp. cinnamon Mash potatoes, add rest of ingredients. Bake 20 minutes at 350 degrees. Add topping and bake 10 more minutes. TOPPING: 3/4 c. crushed corn flakes 1/2 c. nuts, chopped 1/2 c. brown sugar 3/4 stick butter Melt butter and combine with crushed flakes, nuts and brown sugar. Spread over potatoes and return to oven for 10 minutes. Serves 8. |
