SWEET POTATO SOUFFLE | |
2 lbs. canned sweet potatoes 1/2 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/2 c. soft butter 2 eggs 1 tsp. vanilla 1/2 c. white sugar 3/4 c. brown sugar 3 tbsp. flour 1/2 c. pecans Beat sweet potatoes, salt, cinnamon, nutmeg, 1/4 cup butter, 2 eggs, vanilla and white sugar until fairly smooth. Put into 2 quart souffle dish. Mix remaining butter, brown sugar, flour and pecans. Sprinkle on top and bake at 350 degrees for 35 to 40 minutes. |
