SOUFFLED SWEET POTATO 
6 c. hot sweet potatoes
3/4 to 1 c. sugar
1/4 c. butter
1/2 tsp. vanilla
1/8 tsp. nutmeg
3 eggs

Place sweet potatoes, sugar, butter, vanilla and nutmeg in large mixer bowl. Beat until smooth and fluffy. Add eggs, one at a time, beating well after each addition. Place in souffle dish or 2 quart casserole. Bake at 400 degrees for 30 minutes. Serve hot.
