LEMON SQUARES | |
3/4 stick butter 1 c. + 2 tbsp. flour, divided 1 c. sugar Grated rind of 1/2 lemon 1/4 c. confectioners' sugar 2 eggs 2 tbsp. lemon juice Preheat oven to 350 degrees. Blend butter, confectioners' sugar and 1 cup of the flour. Pat into 8" square pan. Bake 12 minutes or until light golden. Beat eggs lightly and add granulated sugar, 2 tablespoons flour, lemon juice and rind. Pour this mixture over the hot crust and return to the oven another lemon appears firm. Remove from oven and run knife around side of pan to loosen, while cooling. Cut small squares when cool. Sprinkle with confectioners' sugar. Makes 25 squares. |
