LEMON CHEESECAKE SQUARES 
CRUST:

3/4 c. butter flavor Crisco
1/3 c. brown sugar
1 1/4 c. flour
1 c. Quaker Oats, uncooked
1/4 tsp. salt (optional)

FILLING:

1/2 c. seedless raspberry jam
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 tbsp. flour
2 eggs
3 tbsp. lemon juice

Heat oven to 350 degrees. Grease a 13 x 9 inch baking pan.

CRUST: Beat Crisco and brown sugar. Add flour, Quaker Oats and salt. Mix. Press onto bottom of pan. Bake 20 minutes. Spread jam over crust. FILLING: Beat cream cheese, sugar and flour. Add eggs and lemon juice. Pour over jam. Bake 25 minutes. Cool and chill. Cut into squares.
