CHICKEN FRIED RICE 
6 chicken thighs
2 bags Success rice
1 bell pepper, chopped
1 med. onion, chopped
1 sm. can mushrooms
2 tbsp. butter
5 tbsp. soy sauce
2 eggs, beaten

Cook chicken fully (either boil or microwave) and cool. Cook rice and place in cold water to cool. Skin and debone chicken and chop into bite-size pieces. Place butter in electric skillet at 300 degrees. Saute pepper, onion, and mushrooms until soft. Pour in rice, chicken, and soy sauce and mix well. Reduce heat and simmer for 20 minutes. Turn heat back up to 300 degrees.

Make well in rice and pour in beaten eggs. Stir with a fork as they cook. When they start to get hard, mix into rice mixture. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
