CHICKEN FRIED RICE 
4 tbsp. cooking oil
3 eggs
1 c. chopped onion
1/2 c. chopped green pepper
2 cloves garlic, minced
2 c. cooked, cubed 1/2 inch chicken
2 tbsp. soy sauce
3 c. cold, cooked rice
1/4 c. sliced green onion

Heat 2 tablespoons of the oil in 12 inch skillet over medium heat. Beat eggs slightly. Add eggs to skillet and cook 2 minutes, stirring frequently, or until set. Remove eggs from skillet and set aside. Add remaining oil to skillet. Saute onion, green pepper and garlice in oil 5 minutes or until tender. Stir in chicken, soy sauce and rice. Cover and reduce heat to low. Cook 5 minutes, stirring occasionally, or until heated. Cut egg into bite size pieces and stir into mixture. Sprinkle with green onions. Makes six servings.
