BEEF ROAST SAUERKRAUT 
1 beef roast
3 tbsp. oil
1/4 cup chopped onion
1 can sauerkraut
2 cups boiling water
salt and pepper

Melt oil in pan and brown lightly, 1/4 cup onions. Transfer the onion mixture to a Crock-Pot. Add the meat; place sauerkraut and water over it. Simmer or slow cook for 2 1/2 hours or until tender. Season with salt and pepper. Serve with boiled potatoes garnished with sour cream and parsley.
