MELANIE'S ZUCCHINI BREAD 
3 eggs, beaten well
2 c. sugar
1 c. vegetable oil
2 tsp. vanilla
2 c. peeled, grated zucchini
3 c. sifted flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. ground cloves

Beat eggs well. Add sugar, vegetable oil and vanilla. Mix well. Add the zucchini. Sift together flour, baking soda, baking powder, salt, cinnamon, and cloves. Mix all ingredients well. Pour into well-greased and floured loaf pans. Bake at 325 degrees for about 1 hour. Makes 2 loaves. Delicious toasted.
