BAKED SQUASH 
Fresh yellow squash (ends cut off, then sliced in half lengthwise)
Salt and pepper (to season)
Saltine crackers, crushed
butter, melted
Sharp Cheddar cheese, grated (optional)

Place squash, cut side up in 9 x 13 inch pan. Salt and pepper to taste. Mix crushed saltines with melted butter until well coated. Spoon cracker crumbs on top cut side of each squash. Bake at 350 degrees until crumbs are browned and squash is tender, about 45 minutes.

Approximately 10 minutes prior to removal from oven, sprinkle desired amount of grated cheese on top of each squash half.
