BAKED VEGETABLE MEDLEY 
4 lg. yellow squash
8 lg. tomatoes
4 lg. zucchini
6 med. white onion
Salt & pepper to taste
Butter
3/4 c. fresh grated Parmesan cheese
1 c. grated Mozzarella cheese

Grease 2 (2 quart) deep dish casserole dishes. Wash squash, slice thinly. Put one layer of yellow squash in each dish and sprinkle with salt and pepper. Dot with butter and sprinkle with Parmesan cheese. Repeat process with a layer of tomato slices (leaving the skins on). Again, with the zucchini, and then the onions. Continue to layer until both dishes are full. Bake at 325 degrees for 45 minutes. Sprinkle with Mozzarella cheese and pop back into the oven approximately 5 minutes until the cheese melts. Serves 12.
