BAKED VEGETABLE MEDLEY CASSEROLE 
1 (16 oz.) bag frozen broccoli, carrots, cauliflower combination
1 (10 3/4 oz.) can condensed cream of mushroom soup
1 c. (4 oz.) shredded cheddar cheese
1/3 c. sour cream
1/4 tsp. black pepper
1 (2.8 oz.) can French fried onions

Thawed and drained.

Combine vegetables, soup, 1/2 cup cheese, sour cream, pepper and 1/2 can of onion rings. Pour into a 1 quart casserole. Bake, covered at 350 degrees for 30 minutes. Top with remaining cheese and onions; bake, uncovered 5 minutes longer.

We use swiss cheese instead of the cheddar and add extra french fried onions on top. This dish is not for folks counting calories!

I have made this with both cheddar and swiss cheese, I prefer the cheddar. I also add a can of mushrooms to this.
