BAKED ZUCCHINI AND CHEESE
CASSEROLE
 
3/4 lb. zucchini, grated (not peeled)
1 lg. onion, minced
3 slices bacon, minced
4 oz. pkg. Cheddar cheese
1 c. flour
1/2 c. vegetable oil
5 lg. eggs, slightly beaten
3/4 tsp. salt
1/2 tsp. pepper

Combine the above and pour in buttered 10 x 6 x 2 inch pan. Bake at 350 degrees for 40-50 minutes until golden.
