BEEF JERKY 
1-3 lb. round steak
Salt
Pepper
Oregano
Marjoram
Basil
Thyme

Trim off all fat from round steak. Season to taste with the remaining ingredients by pounding in with the edge of a saucer. Cut the meat into 1/4-1/2 inch strips. Cut with the grain of the meat. Spread out on wire oven racks and roast slow at 120 degrees, making sure to crack open the oven door to let moisture escape. It will take about 4-6 hours to dry. Can also be dried in a food dehydrator. Will keep indefinitely under refrigeration.
