ZUCCHINI CASSEROLE 
2 c. cooked zucchini
1/3 c. butter
2 beaten eggs
1 tsp. salt
1/2 tsp. pepper
1/2 c. chopped onion
1 c. grated Cheddar cheese
1 c. canned milk or 3/4 cup whole fresh milk
1 c. crushed Ritz crackers

Drain cooked zucchini, add butter. Combine all ingredients except 1/4 cup cheese. Pour into greased casserole and bake 40 minutes at 375 degrees. Sprinkle remaining cheese on top after 20 minutes of baking.
