ZUCCHINI CASSEROLE 
4 c. peeled & shredded zucchini
1/2 c. grated or shredded cheese
4 tbsp. butter
1 tsp. salt
1/2 tsp. pepper
2/3 c. milk
2 c. Ritz or Club crackers
2 tsp. chopped onion

Reserve 1/2 cup of crumbs for top.

Combine ingredients in buttered 2 quart casserole dish. Sprinkle reserved crumbs on top. Bake at 350 degrees for 1 hour. Serve with sliced tomatoes. Can add a little grated cheese on top with the crumbs.
