BEET PICKLES 
1 gal. sm. beets
2 c. sugar
1 long stick cinnamon
3 1/2 c. vinegar
1 1/2 c. water

Cook and skin beets. Add sugar and spices to vinegar and water. Add beets. Boil 5 minutes. Pack beets into hot jars. Cover with boiling syrup. If not enough to cover, add more vinegar. Then complete seal. Put in hot water bath for 5 minutes.
