CHOCOLATE PECAN ZUCCHINI CAKE 
3 eggs
2 c. sugar
1 c. salad oil
1 tsp. vanilla
2 1/2 c. shredded or grated zucchini
1 tsp. cocoa
3 c. plain flour
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. baking powder
1 tsp. baking soda
1 c. chopped pecan

Beat eggs until lemon colored. Beat in sugar and oil. Beat in vanilla and zucchini. Sift flour with salt, cinnamon, cocoa, baking powder and baking soda. With a large spoon, stir into zucchini mixture along with pecans. When thoroughly mixed, spoon into 2 well oiled 9 x 5 loaf pans. Bake at 350 degrees for 1 hour and 20 minutes or until done. Wait 15 to 20 minutes before taking out of pans.
