CHEDDAR CHEESE SOUP | |
1/4 c. butter 1/2 c. flour 1 qt. chicken stock 1/2 c. minced celery 1 c. diced sharp cheese 1/2 c. minced onion 1 qt. milk 1/2 c. minced carrots 1/2 c. finely chopped cooked ham or bacon Salt & pepper to taste Melt butter in large saucepan. Add onion and saute until transparent, but not brown. Blend in flour. Gradually stir in milk, broth, carrots and celery. Simmer, stirring, until mixture thickens and bubbles. Reduce heat and add cheese and stir until melted. Add salt, pepper and paprika. Simmer gently 15 minutes, stirring occasionally. Add bacon or ham (bacon bits may be used). |
