ULTIMATE CHEDDAR CHEESE SOUP 
3 minced garlic cloves
1 c. finely chopped onion
2 tbsp. butter
1 c. sliced mushrooms
1 red bell pepper, diced
1 lb. Xtra sharp Cheddar cheese, grated
2 tbsp. cornstarch
2 c. chicken broth
6 oz. ham, diced
1 tsp. Worcestershire sauce
2 c. half & half
1 c. sm. broccoli pieces, cooked
3/4 c. diced carrots, cooked
Salt & pepper

In skillet, saute onion and garlic in butter until limp. Add mushrooms and bell pepper; cook a few minutes. Mix together cheese and cornstarch.

Put chicken broth in large saucepan and bring to a boil. Reduce heat and add the cheese and cornstarch mixture a little at a time, stirring until smooth. Add ham, Worcestershire, half & half, onion mixture, broccoli, carrots, salt and pepper to taste. Heat over low heat until hot.
