BROCCOLI CASSEROLE 
2 (10 oz.) pkg. frozen broccoli
1 can cream of mushroom soup
1 c. mayonnaise
2 eggs, beaten
1 c. shredded sharp cheese
Pepper to taste
4 tbsp. chopped onion
Crushed Ritz crackers (or potato chips) for topping
4 tbsp. butter

Cook broccoli for 5 minutes in boiling, salted water. Drain well. Combine soup, mayonnaise, eggs, cheese, pepper, and onion. Mix well. Add broccoli and turn into greased 2 quart baking dish, sprinkle with crushed crackers, and dot with butter.

Bake at 350 degrees for about 30 minutes until it bubbles and brown.
