BROCCOLI CASSEROLE 
1 (10 oz.) pkg. frozen chopped broccoli
1 can cream of mushroom soup
2 eggs
1 c. mayonnaise
1 1/2 c. grated cheese
Several crushed potato chips or crackers (opt.)
Sliced onion rings

Cook broccoli as directions on package; drain. Combine soup, eggs, cheese and mayonnaise; mix well. Add broccoli.

Pour into buttered casserole and bake in 350 degree oven until set. Remove from oven, cover with onion rings or potato chips and bake until light brown. I usually add 4 to 6 crackers or cheese crackers to mixture to make a better consistency (crumble the crackers).
