PASTA PRIMAVERA | |
1 (16 oz.) pkg. ziti 2 med. zucchini, cut in strips 2 med. red peppers, cut in strips 1 c. chopped scallions 1/3 c. butter 2 c. chopped tomatoes 1/2 c. flour 2 c. milk 2 c. chicken broth 1/2 tsp. nutmeg 1/4 tsp. pepper 2 pkgs. chopped spinach, thawed Cook pasta as directed. Spoon into large greased dish. Saute vegetables in butter. Add tomatoes. Spoon over pasta. Place flour in skillet, blend in milk. Add broth, nutmeg and pepper. Cook and stir over medium heat until thick. Add spinach. Pour over pasta and vegetables. Cover and bake at 350 degrees for 40 minutes. |
