OVEN FRIED OKRA (SMOTHERED) 
Okra, sliced, enough to fill lg. roaster
2 lg. onions, chopped
1 c. oil
Salt & pepper to taste

Pour oil in bottom of roaster, add sliced okra and chopped onions. Salt and pepper to taste.

Cover roaster, bake for about 1 to 1 1/2 hours at about 375 degrees, stirring occasionally. Okra will brown and smother down, ready to serve. It may be frozen in freezer bags to be used later for okra gumbo or stews. Good way to put up your okra when in season.
