OVEN FRIED CHICKEN 
1 chicken, cut up for frying
1 c. flour
2 tsp. salt
1/2 tsp. pepper
1/2 c. (1 stick) butter

Mix flour and seasonings in paper bag. Melt butter in shallow baking pan. Shake 3 or 4 pieces of chicken up in the bag at a time to coat well. Place chicken in single layer, skin side down, in baking pan. Bake 30 minutes in 425 degree oven. Turn chicken; bake another 15 minutes or until tender and brown. Serve hot.
