LEMON GINGER CHICKEN SALAD 
2 c. cooked chicken
1 c. red or green grapes
1 c. sliced celery
1/4 c. toasted almonds

DRESSING:

1/2 c. mayonnaise
1/4 c. sour cream
1 tbsp. sugar
1/4 tsp. salt
1/2 tsp. ginger
1 tbsp. lemon juice
1/2 tsp. lemon rind

Cube chicken and add celery and grapes. Stir together ingredients for dressing and toss with chicken mixture. Cover and chill at least 2 hours (not overnight). Before serving, sprinkle with toasted almonds.
