3/4 c. all-purpose flour 2 tbsp. cocoa, unsweetened 1/2 tsp. baking soda 2 tbsp. plus 2 tsp. vegetable oil 1 tsp. vanilla extract 1 tsp. chocolate extract 1/2 tsp. imitation butter flavor 1 tbsp. plain lowfat yogurt 1/4 c. plus 2 tbsp. cold water 1/4 c. plus 1 tbsp. sugar (Or sweetener equivalent to 15 teaspoons sugar). Preheat oven to 350 degrees. In a medium bowl, combine dry ingredients, mixing until blended. With a spoon, make a well in the center. In a small bowl, combine remaining ingredients, mixing with a spoon. Pour into a well in dry mixture. Stir until all ingredients are moistened. Place batter in a 4 x 8 inch nonstick loaf pan or one that has been sprayed with a nonstick cooking spray. Bake 15 minutes. Cool in pan on wire rack. Makes 8 servings. |
