ANGEL FOOD CAKE (AND CHOCOLATE) 
1 c. cake flour
7/8 c. sugar
1 1/2 c. egg whites
1 1/2 tsp. cream of tartar
1/3 tsp. salt
1 1/2 tsp. vanilla
3/4 c. sugar

Measure and sift first 2 ingredients together; set aside. Beat egg whites, cream of tartar, salt and vanilla until foamy. Add the 3/4 cup sugar gradually, beat until stiff. Sift gradually flour-sugar mixture over meringue. Fold in gently until flour mix disappears.

For chocolate angel food, substitute 1/4 cup cocoa for 1/4 cup flour; sift 3 times. Bake at 350 degrees for 35-45 minutes.
