PINEAPPLE UPSIDE DOWN CAKE
(MICROWAVE)
 
1/2 c. packed brown sugar
Pineapple slices
Maraschino cherries
Yellow cake mix

Butter bottom of pan; sprinkle brown sugar over the bottom. Arrange pineapple slices and Maraschino cherries in dish.

Prepare cake batter by adding 1/2 teaspoon baking powder and using only 1 cup of water (or pineapple juice from can). Follow the rest of the directions on box. spread batter in pan. Place elevated (on another pie dish) in microwave. Microwave on high for 6 to 9 minutes; rotate every 2 minutes, turn a quarter each time.

Since microwave ovens vary in power, you may need to adjust your cooking time.
