PLATE BOIL SOUP AND NOODLES | |
4 c. water 2 tbsp. dried parsley 1/2 inch onion and celery About 3/4 lb. of plate boil beef or short ribs Salt to taste 3 carrots 2 potatoes About 2 big handful of noodles If you have more than two people, increase ingredients, accordingly. This is a Slovak Dish. You can use leaner beef, but's it's tastier with plate boil. Cook meat three hours in 6 quart kettle or 1 hour in pressure cooker, with the parsley, onion and celery. Then cut carrots up in two inch pieces, add to meat and broth. Bring to boil, simmer for five minutes. Then add potatoes cut up, bring to boil and cook until done. Maybe ten or fifteen minutes. Check for saltiness. Meanwhile cook the noodles in boiling salted water until done. Drain, put in soup plates. Pour broth over. Take out meat and potatoes and carrots. Serve on a regular dish; along with noodles or after. Bread if desired, and salad if wanted. |
