NEW ENGLAND BOILED DINNER | |
4 lb. salt silverside or brisket of beef 6 black peppercorns 1 onion 1 bouquet garni 1 tbsp. brown sugar 8 carrots 8 med. potatoes, quartered 6 sm. onions 8 sm. beet roots (beets) 1 sm. head of cabbage Put beef into a large saucepan and cover with cold water. Boil, skimming off any scum that rises to the surface. When the scum stops rising, add the peppercorns, onion, bouquet garni and brown sugar. Reduce heat to low, half cover pan and simmer for 2 hours. Remove and discard onion and bouquet garni. Add carrots, potatoes, onions and beet roots and simmer gently for 30 minutes. Add cabbage wedges and simmer further for 15 minutes or until meat and vegetables are tender. Transfer meat to carving board and cut into thick slices. Arrange on a warmed serving dish and surround with vegetables. Serve immediately. |
